THE RIG

RECIPE: RUSTIC ARTISAN BOULE

Makes: 1 loaf • Prep: 15 min (+ overnight rise) • Bake: 45 min

  • 500 g bread flour
  • 375 g warm water
  • 10 g fine sea salt
  • 2 g instant yeast (about ½ tsp)
  • Dust with rice flour or all-purpose flour before baking

Mix all ingredients until no dry flour remains. Cover and let rise overnight (12 to 18 hours). Shape into a tight boule, rest 30 to 60 minutes, then score a deep "X" across the top. Bake in a preheated Dutch oven at 230°C (450°F) for 30 minutes covered, then 15 minutes uncovered until deeply golden with a crisp, crackling crust. Cool completely before slicing.
